Divella manages 2 hectares of vineyards in Gussago, a small town near Brescia in the midst of the Italian Franciacorta region: 1,5 ha of Chardonnay and 0,5 ha of Pinot Noir, both conducted on organic way.
With these grapes she produces around 7000 bottles of natural raw wine, 4 different cuvées, all pas dosé, that age on yeast from two to five years. All cuvées are produced as ‘Metodo Classico’:
Blanc de Blancs -made only with Chardonnay grapes, Clo Clo – a rosé from Pinot Nero which has undergone a light maceration, NiNi – a blend of Chardonnay and Pinot Nero (vinified as white wine) and last but not least, Blanc de Noirs – made from Pinot Nero vinified as ‘white wine’.
The fermentations are spontaneous, no sulphites added, no dosage.
